I think your best bet is going to the jazz clubs on main Street at night. They are so cosy and you feel so good and personally, I wouldn't go anywhere else. I heard about other venues on Commercial Drive and even Chinatown, but I don't know anything about them and I don't feel like giving any advice about that. Another thing you could do is to check out the Georgia Straight weekly (www.straight.com) and I believe you have there pretty much all the concerts and live-music venues in Vancouver at any given time.
